"After time and patience, we bring to you our 2023 bottling of Dovetail Pommeau. Pommeau is fortified cider, comparable to port or other fortified wines, and traditionally made in Northern France. We began this blend of Dovetail 6 years ago barreling a small lot of Ben David and Rhode Island Greening. We added a co-ferment of Ben Davis, Rome and Spy in 2019, stopping fermentation halfway with fruit brandy, and then aging in 100% new American oak casks. Dovetail is drier than its European cousins, but with some residual sugar from the apples. It has notes of honeyed apricot, peach, toffee and soft tannins from the long oak aging. Best enjoyed lightly chilled as an aperitif or as a beautiful end to a good meal."
